Kuveretta 18700 is a non-lauric vegetable fat (CBR) based on palm oil fractions and rapeseed oil. Its excellent heat stability and desired snap make Kuveretta 18700 an ideal fat for thin coatings for wafers, cookies and cereal bars. Coatings produced with Kuveretta 18700 show a silky shine and a slow and even flavour release.
Kuveretta 18700 is used for the partial replacement of cocoa butter in coatings. It is especially suitable for thin coatings for wafers, cookies and other bakery products. Kuveretta 18700 has a good resistance to fat bloom and therefore it can be used in other products which require a long shelf life. Coatings with Kuveretta 18700 show a slow and even flavour release. That’s why the percentage of expensive flavourings can be reduced in many recipes. The required cooling conditions after enrobing are similar to processing with cocoa butter. The compatibility of Kuveretta 18700 with cocoa butter is quite good. Concerning the whole fat content of the recipe, up to 20 % of cocoa butter can be used.
