For years, fats and oils have been under fire from all sides in public dialogue. However, it is undisputed that the human body needs fats to stay healthy. Moreover, fats are the most important flavour carriers – without them, enjoying food would fall by the wayside.
At the “Fat Symposium” in Solingen on May 16 and 17, 2017, the complex topic “fats and oils for the confectionery industry” will be considered from every angle. On the first day, the participants may look forward to fascinating presentations on markets & trends and health aspects. Sustainable palm oil production will be covered in detail in a round table discussion. The second day with presentations on product development, fat crystallisation, lecithins, emulsifiers, and analytics is a special highlight for product developers from the food industry.
